So last weekend I made one of my favorite dishes, pumpkin and spinach lasagna. I'm not much of a cook, really. So when I make lasagna I make it as easy and already prepared as possible. Using ready bake noodles and pre made sauce. I also combined alfredo and marinara sauce for this lasagna. The alfredo makes it a little extra deluxe. Add two cups of pumpkin puree' to the ricotta & egg mixture, and layer with a generous sprinkling of frozen spinach. Shredded Mozzarella on top melts into a gooey, bubbly, delight.
Also when I make this lasagna I pretend it's healthy. I mean, pumpkin
and spinach are super foods, right? ;) Wes and I ate this dish so fast
it was kind of ridiculous.
